Blueberry Lime Muffins
Three tries later, I think I've perfected the blueberry muffin. This one is definitely going in the cookbook as it's dairy-free and one of the few non-chocolate-y sweet things I enjoy.

Guys, I’m having a heck of a time perfecting these recipes. After almost eight years in the TRGL kitchen and a lot more years in my own kitchen, I thought I had a bunch that just needed little tweaks. Turns out, this is going to take a lot more work! Yes, woe is me for HAVING to spend the whole day in the kitchen, listening to audiobooks and cooking up a storm. It’s a rough life.
This blueberry lime muffin recipe was actually an original on the old TRGL blog, but I wanted to test it with butter and compare it to a version in the King Arthur Cookbook.
