The World's Easiest Fruit Salad
This super simple fruit salad will become your go-to recipe when you need to add some fiber to the table. Change it up with the seasons or don't - these fruits are always available!
I have a book club friend who brings fruit to every gathering. (Hi April!) She discounts this contribution and says we all worked harder than she did. Dude, every meal could stand a side of fruit. Breakfast, lunch, dinner, snack - all could use some roughage, and fruit is so much more fun than vegetable. Never think less of yourself for bringing the fruit. You’re making your fellow guests healthier AND you took care of yourself. How? By making a dish that literally took three minutes to make.
We work smarter, not harder in the real good life. This is a perfect example of that.
P.S. No these aren’t pictures of this exact recipe. I’ve made it so many times I just assumed I had a picture of the current version. Turns out I don’t, but these images show the versatility of this base fruit salad recipe (and the fact I am a human who forget things. Eek.)
Notes
If you need to make this ahead of time, do everything except the apples. Dice those and add them with the lemon juice at the last minute.
If you have access to fresh mint or basil, julienne a small handful and add at the last minute.
